21 Day Fix Meal Ideas: Week 1

So, I wanted to put together a few yummy recipes that I have either developed myself, found on Pinterest, or stolen from a friend or family member : )  This is the list that I am going to choose from for my first week of the 21 Day Fix!  I wanted to get this out early, so if you needed to grocery shop you'd have plenty of time!  





Turkey Taco Lettuce Wraps

Servings: 4 • Size: 2 lettuce wraps

21 Day Fix Info: 1 red, 2 green


Ingredients:
  • 1.3 lbs 99% lean ground turkey
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 small onion, minced
  • 2 tbsp bell pepper, minced
  • 3/4 cup water
  • 4 oz can tomato sauce
  • 8 large lettuce leaves from Iceberg lettuce
  • (optional) 1/2 cup shredded reduced fat cheddar
Directions:
Brown turkey in a large skillet breaking it into smaller pieces as it cooks. When no longer pink add dry seasoning and mix well. Add the onion, pepper, water and tomato sauce and cover. Simmer on low for about 20 minutes.


Wash and dry the lettuce. Divide the meat equally between the 8 leaves and place in the center of each leaf and top with your favorite taco fixins!


My Favorite Recipe: Southwest Pita

Servings: 2 • Size: 1 Whole Pita (2 hales)
21 Day Fix Info: 1 yellow, 2 greens, 1 red


Ingredients:
  • 1 boneless chicken breast
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp of olive oil
  • 1/2 small onion, minced
  • 1 jalepeno, diced
  • 1 Roma tomato, diced
  • 2 Whole Wheat Pitas
  • (optional) 1/2 cup shredded reduced fat cheddar
Directions:


Grill the chicken breast on Med-high heat until cooked thoroughly. In a seperate skillet saute onion with olive oil for about 2 minutes, add in tomato, jalepeno, chicken, paprika, and cayenne pepper.  Mix together.  Stuff chicken mixture into pita pocket and enjoy!





21 Day Fix Friendly Turkey Chili

21 Day Fix Info: 1 red, 1 yellow, 2 green






Ingredients:
  • 8 oz ground turkey breast
  • 1/4 cup chopped onion
  • 1 green pepper
  • 6-8 small tomatoes
  • 2 yellow containers of red kidney beans
  • 1 tbsp or so of chili powder
  • 1/2-1 tsp ground cumin
  • 1 tsp or 2 of the 21 day fix all purpose seasoning
  • garlic powder, sea salt & ground pepper to taste
  • optional: cheddar cheese
Directions:
Start by sauteing the ground turkey with the chopped onions until turkey is fully cooked.  While that is cooking, place 1/2 the green pepper and all of the tomatoes in a food processor or blender and blend until desired consistency.  This is the base of your chili.
Once that’s blended, put the base in a saucepan and bring to a boil.  Then turn it to low and add the spices, the turkey & the kidney beans.  Put a lid on it and simmer for 2 hours until it thickens up.







Steak and Sweet Potato Fries

21 Day Fix Info: 1 green, 1.5 red, 2 yellows








Ingredients:
  • 1 Red of Lean Steak (4 oz)
  • 1 Sweet Potato (2 Yellows)
  • 1 Green of Mushrooms
  • 1 tsp Olive Oil
Directions:
Preheat oven to 450 degrees. Cut sweet potato into fries. Spray with olive oil and add your choice of chili powder, italian seasoning, and/or garlic powder. Bake at 450 for 20 minutes.  Grill the steak.  Saute mushrooms in a tsp of olive oil.






Chicken and Mushroom Marsala

21 Day Fix Info: 1 red, 1 yellow, 1 green, 1 orange






Ingredients:
  • Cooked Chicken
  • Whole Grain Pasta
  • Sauteed Mushrooms and Onions
  • Parmesan Cheese
  • 1 tsp of Coconut Oil

Directions:
Measure our your portions in the appropriate containers.  Heat 1 tsp of coconut oil in a pan. Stir fry everything except the Parmesan cheese together until heated.  Serve on a plate and top with Parmesan cheese!
